Devil's Cake

Sept 26, 2009 is my last Wilton Class Course 1. So, we were asked to iced a cake for the class. After thinking long and hard for "the cake"... I thought of chocolate cake! Why not? It's certainly, more sinful than a normal butter cake! So, I searched for a recipe.. and found Devil's Cake! (Why not?! Its certainly, more sinful than a normal chocolate cake!) :-))
The journey for Devil's Cake comes with a challenge indeed... my cake sunk. Reason? A few:: Oven too hot or Over-mixed or Under-baked!  To cut the long story short, in order to redeem myself, I baked 3 more cakes!

One 8 in. cake and Two 9 in. cakes. Reason? They are for a birthday gal (Richelle - yup, unique name) and Phau.  In the end, I concluded 9 in cakes, came out perfect... flat and smooth.
So, here we go.. the pictures..

The sunken 8'inch and I've to level the top a bit.

This is after the torting and getting ready for the filling.

Yumm... Ganache frosting!

Ok.. This is the 9'inch cake for Phau - Happy Birthday!
Yeah, yeah.. my writing sucks! Top left hand corner... that's PHAU... but looks more like vines haha. Nevermind, shall improve... later...

This is the 8 in. Picture taken from the class.

Here are the cakes from my classmates. They are all beautiful and colorful!

This is our instructor, Kathryn. She is very nice and helpful.

Carrot Cake

Haha... my pan is too large for the cake... so, its a bit flat.
This is at 8pm.....

Then, I level the cake and split the cake into half to get the extra height! hehehe... cheating... but its ok.  Then, its filling time...

and... icing time...

and the crumb coat...

and... its now iced!

its now... 11pm....

its now.. 12:00 am....
the roses are killing me!!!Yeeaaawwww!!!!
close up on why they are killing me...

yup! the petals are not smooth... the damn icing was too stiff! Lesson 101: Not too stiff!!

Anyway, both Frank & I had it for breakfast and the rest are for my lovely colleagues!
Once again, thanks for helping me finish this cake!

Test cake

Alright! There is no such thing call "test cake"... I bought a Marble Cake from Bengawan Solo to use it for cake decorating for my Wilton Class. 'Ze outcome ze like tis....

We were asked to crumb coat and iced the cake!
Spent a couple hours here as I do not want to see lines!!! Next....

Well, this is after the class and I was very, very, disappointed my cake shifted in the car ride home. Sigh.... This is suppose to look like a RAINBOW... not a smiley. I've to take the picture like this so that you wont see the "exposed" side of the cake. :-(

Then, I practiced the Wilton Rose. Well, as you can see, the top left hand corner blue rose, was a disaster. It sort of tipped when it is suppose to "stand"...

Anyway, next project coming up soon!

Raisins & Pistachio Cupcakes

Next, is for Mee Keow's little boy - 1 month old..

Made these on medium sized cups.

hmm... somehow I find them too er.... like "ang ku kueh"... not entirely happy with this choice of colors.. but heck.... too late. Its either, dump the entire icing or continue with it. Well, Mee Keow was happy about this. :-)

I dunno about you, but I've always wanted to see what cupcakes look like underneath all the icings... So, there! Feast your eyes! hehehehhe

Butter Raisins Cupcake

Eric & Charmaine's little boy, Zeeren - 1 year old birthday. Very cute and chubby boy!

Have to flatten the cupcake first. Here, I used Lemon Flavoured Buttercream, hoping to give it a bit of tangy lemon zest!

Next to decorate...

If you noticed, no more handwritten notes...........

On the each cuppy, there are 3 blue berries and 2 chocolate coated biscuits.
(yeah well, the icing needs huge improvements....)
