Grated Cheddar Cheese Cake

This is from my Lesson 3. The cake tastes light and if you like Parmesan cheese, you'd like this cake.

Chocolate Chip Cupcakes

Baking the Chocolate Chip Cupcakes ("CCC")s are no big deal. Altogether, there were 69 cupcakes. BUT, thinking of a design for these are tough! May Fun came with drawings of Mr Men Little Miss. The attempt to draw these little cartoons using royal icing is killing us softly........

In the end, we came up with Sesame Street. The easiest are Elmo and Cookie Monster.

I really had fun making these!

Then, of course we cannot forget the purpose of these cupcakes. It for May Fun's little Diana's 7 year-old gal birthday party, held at Go Go Bambini!

Chocolate Cupcakes

These 10 Chocolate Cupcakes are from Phoon Huat. They iced the cupcake with a chocolate coat and the decos are from lessons learnt.

Banana Walnut Cake

For the deco, I used lemon buttercream to ice the cake. Yes, with lemon rind and fresh lemon juice, to give the buttercream some taste. For the flowers, they are in royal icing, that just melts in your mouth.



Closed up of the Rose Bud and reverse shell borders, I've been practising....




For the sides, the flowers are Apple Blossom.

hmm... not very smooth huh... ehehehe...

Cranberry Cake

I started the Wilton Course 2 Cake Deco class on Oct 8 and I was very, very happy with everything that Phoon Huat provided.  Yes!! They provided us with a cake each! I was like WOW... the cake look good enough to eat, even without the icings...  ROYAL icing, to be precise.

After the 2 hours of practiced, we were asked to transfer the flowers onto the cake. Here, is the outcome.


Colorful yeah... well, they provided the cake, the icings and yes, the box!!! The cake was cranberry and coated with dark chocolate at the top! (My colleagues were like... YUM!!!)



The flowers closed up:
Dark Pink : Rosebud (this one is the killer. Need major improvement)
Yellow : Chrysanthemum (could be better, smaller and more dainty)
Pink : Apple Blossom (started out ok... but the more I made these, the uglier it look)
&
The Rope Border.

Lesson 101: Royal Icings must be treated like royalty. They must have oil free tips, must work fast with them and most importantly, if the piped flowers are not completely dried, do not touch! They break easily.
