The spark of interest in baking came from the Double Chocolate Brownie I baked out of curiosity. Since then, it was for two charity funfairs, one-month baby celebrations, birthdays to just-feel-like-it situations. I am still learning the ropes in baking. That is why some disaster outcome is shown here too. Thanks to my family & friends and my colleagues, who have been the best Test Subject, I managed to get some inspiration.

Jacqueline's Birthday
My dear friend Jacq was in town and I so wanted to bake for her, as promised (in fact, I think, I've promised a few friends and yet to deliver.. but nevermind... later... ) Anyway, I wanted something that taste nice and not merely "look" nice.
Fondant is definitely out, if we are talking about taste here.... Royal Icing will look great... but not without some preparation.. and I didnt have time for preparation... in the end, we settle for Buttercream Icing!! With loads of butter!! and yes, it was fantastic - I've got living proof - someone licked all the buttercream from the plate and the cake knife!! impressive!!
Well, as mentioned to Jacq, I was not that satisfied with how the cake looks.. but it was too late to change... lack of planning as well.. and looks like my creative juice didnt flow.. as I've not been decorating for ages!!!
I used a basket pan, that came from Wilton. So, naturally, I want to try the basket weave design.

Lemon Cake with Passion fruit syrup
It's been a while since I baked and after a trip to Melbourne, I've found that passion fruit cakes or tarts are very popular there, esp when they are in season. The nearest recipe I found that uses passion fruit, is this. I found the recipe from an Australian magazine. I wanted to make the syrup from the fruit itself. But, as they are not in season here, I used a pre-packed passion fruit juice.
The texture is a bit like Japanese cheese cake. But, no cheese were used. :-)

Valentine's Day Modelling Chocolate & Truffles Praline
This workshop was all about chocolate. Dark Chocolate Couverture was used in the modelling chocolate and also on the heart shaped box. It was fun all the way and not as tiring as Elmo. We started off using modelling chocolate as the top and base of the box cover, the sides of the box and also, roses, leaves & vines. Modeling chocolate does not taste good. So, its used mainly for deco and anyone who puts it in the mouth will find it a bit tasteless. Unlike the pure chocolate which forms a harder foundation as the base of the box and also, the middle section of the top cover.
We first started off rolling the modelling chocolate and cutting it with a 6 inch heart shape and after that, roses and leaves.

We didnt actually make the pralines. The instructor showed us and because this takes time to harden, we were all given 12 pralines each and the deco was provided as almond nibs, pistachio milled, cocoa powder, green sugar and yellow sugar. The most prized would be the gold leave.

3D Elmo Cake
Well, this is my first attempt at a 3D Cake Deco and I have to choose dear ELMO! I thought we can just pipe Elmo's furs on him... but boy, were we wrong! We had to use marzipan to create his furs! No doubt marzipan taste delicious, but the process of creating Elmo's furs were very time consuming.... 3 1/2 hrs!
From 6:30pm, I completed Elmo at about 10pm. While, the deco for the rest of the cake was a breeze.............
Anyway, the cake from PH was a butter cake and I must say, it goes very well with marzipan. Yes, it was delicious! Rich butter taste with a layer of almond paste (marzipan)!

Look at the mess on the table.... my Elmo! After all my hard work, I want to hug him. But reviews were that he didn't quite look like the Elmo we know.... but, heck - I shall conquer him next try!

Sticky Date Pudding
These were made for our New Year Eve's party. (I have been late posting these. :-) ).
We had our first taste of Sticky Date Pudding in Little Creatures @ Perth. It was so delicious, Frank spent some time sourcing for the recipe from internet. In the end, the recipe did not disappoint! It includes the caramel recipe too. :-)
